Asian Salmon with Bird’s Nest Pasta and Asparagus (serves 4-6)

Cooking spray
4 boneless skinless salmon filets (pink), approx 6 oz or 170 g each
1/4 tsp Mrs. Dash Original Seasoning per filet medium size paper bag (grocery type)
heavy aluminum foil
1/4 cup bottled soy-ginger dressing or Szechuan peanut satay sauce / marinade
20-24 (1 lb or 450 g) stalks asparagus
1 Tbsp water
1 tsp Mrs. Dash Table Blend seasoning
butter (optional)
8 (3/4 lb or 340 g) bird’s nest pasta bundles
1 tsp sesame oil (optional)
2 Tbsp bottled Szechuan or soy-ginger sauce

1. Preheat oven to 350 F.
2. Spray a nonstick pan with cooking spray.
3. Wash salmon under cold water, pat dry with paper towel, season one side. Saute, spice side down, over med-heat, approx 1 minute. Season, turn, sauté the other side.
4. While the salmon is searing, wet the outside of the paper bag thoroughly under cold water. Spray a large piece of aluminum foil, shiny side up, with cooking spray.
5. Arrange the seared filets on foil. Drizzle Szechuan sauce onto each piece. Turn the edges of foil up to prevent leaking. Pull the foil into the inside of the wet bag. Curl the end of the bag tightly, place in hot oven on centre rack. Set timer for 25 minutes.
6. Bring water to a boil for the pasta.
7. Wash asparagus and snap off bottom ends. Place in a microwave-safe pot with lid. Add water and spice, then cover. Microwave at high for 5 minutes.
8. Cook pasta for recommended time, approx. 4 minutes. Gently drain in colander. (I like to drizzle sesame oil in the empty cooking pot and place the bird’s nests back in the pot. I swirl them gently in the oil, then cover to keep them warm.)
9. When timer rings for salmon, reheat asparagus 2 additional minutes.
10. Place hot salmon on noodles directly on serving plate. Combine salmon drippings from foil with additional sauce. Sir and drizzle over salmon and noodles. Yuuummm!!
