| Honey-Mustard Chicken Burgers with Fresh Fruit Salad
1/2 cantaloupe (3/4 lb or 350 g) or any melon in season 1 bunch red or green grapes (3/4 lb or 350 g) 8 strawberries 2 small kiwi fruit 1 cup low-fat French vanilla yogurt 1/3 cup Dijon mustard 1/4 cup liquid honey 1/2 tsp Mrs. Dash Italian Seasoning 1/2 tsp Mrs. Dash Extra Spicy Seasoning 4 large boneless skinless chicken breasts (1-1/2 lbs or 700 g) mayonnaise, tomatoes, lettuce, slivered onions (optional) 4-6 multigrain buns
Serves 4-6
1. Preheat BBQ to med (approx 350 degrees F). 2. Wash fruit under cold water. Cut fruit into bite size pieces and place in serving bowl. Refrigerate until ready to eat. Place yogurt in small serving bowl and refrigerate. 3. Mix the following together in a large bowl: Dijon mustard, honey and spices. Cut chicken breasts in half to make 8 pieces. Toss all 8 pieces into mustard bowl and keep lifting and mixing with a fork until all the pieces look glossy. Grill on the BBQ, lid closed, approx 5 minutes each side or only until center is no longer pink.
...meanwhile... Prepare your favorite toppings. Serve on buns with anything you choose.
Option Sometimes I like to serve the fruit salad as an appetizer before cooking the chicken.
