| Goody Two Chews
Cranberry and peanut butter granola clusters. Perfect for kids’ lunches.
It actually takes more than two chews to get these clusters down, but we just couldn’t swallow the fact that our title didn’t make sense, so we went with it anyway!
1/3 cup light peanut butter 1/3 cup pure maple syrup 2 egg whites 1 tsp pumpkin pie spice 2-1/2 cups low-fat granola (see tip below) 3/4 cup dried cranberries
Preheat oven to 250º. Spray a 12-cup muffin tin with cooking spray and set aside.
In a medium bowl, beat together peanut butter and maple syrup using medium speed of electric mixer. Add egg whites and pumpkin pie spice and beat again until smooth.
Stir in granola and cranberries. Divide mixture evenly into muffin cups. Bake on centre oven rack for 45 minutes. Remove from oven and cool completely on wire rack before removing clusters from pan. Store in airtight container. Makes 12 clusters.
Tip: Look for granola without fruit or raisins, otherwise these treats might be too sweet. Our very favourite brand of granola is made by Nature’s Path, a Canadian company. The pumpkin-flax granola is absolutely perfect for this recipe.
